Sticky Gingerbread and Parkin
I original got this recipe passed down to me by my mother in 1975 and decided in 2021 to try to get a lower carbohydrate and healthier Sticky Gingerbread and Parkin made for a cycle ride so I was able to have a cake while the rest of them had cakes and pies, and for me to still keep good control of my Diabetes.
I changed the Ingredients to do this and hope you enjoy it as much as I do to have a cake treat on a C.T.C Cycle Ride.

- Small saucepan
- 7 in - 2lb - Square Loaf Tin
- Teaspoon
- Grease paper
- Whisk
Serves 8 • vegetarian • • prep: 15 minutes • cooking Time: 1¼ – 1½ Hours
Each portion serves roughly: 16.875g
Ingredients
- 4 oz. or 116g - Butter or Margarine or Lard
- 6 oz. or 150g - Agave Nectar
- ¼ Pint Alpro Soya Milk or 4Fl oz
- 2oz (Dark Treacle)
- 2 Eggs or 3 small Eggs
- 2 oz. or 57g Natural Erythritol - brown sugar or Swerve - Sugar Replacement, Brown
Dried Ingredients
- 1 Level teaspoon mixed Spice
- 1 Level Baking Powder
- 1 to 2 teaspoons of Ground Ginger
- 1 teaspoon Bicarbonate of Soda
- 8 oz or 227g Ground Almond Flour or Chandra whole foods Almond Flour

To Vary RecipeThere is also a Yorkshire way too by adding 3oz lard instead of 4oz butter and adding 4oz medium oatmeal or rolled oats and ¼ level tsp salt in place of 8oz flour.
To make it stiffer 1 egg and 5 tablespoons of milk
Method
- Warm Margarine or Butter, Dark Treacle, Natural Erythritol or Swerve or Sugar Replacement, Brown, Agave Nectar in a small saucepan (you can do it in the microwave for 10 sec)
do not burn Margarine cook slowly. Add milk after it melted and allow it to cool right down.
- Put all Dried ingredients into a bowl. Mixed spiced, Ground Ginger, Bicarbonate of Soda, Baking Powder, and sift the plain flour.
- Now add to the Treacle mixture with the eggs (eggs need to be whisked) into the flour
- Pour into Loaf Tin
- Bake for 1¼ to 1½ hours
- Gas Mark 2
- Electric 300f - 325f or 150c - 162c
- Oven position Centre
Each serving: 16.875g if Divided into 8 portions
